Almond-Crusted Pork with Honey-Mustard Dipping Sauce Provided by EatingWell.com INGREDIENTS 1 cup coarse dry breadcrumbs 1/2 cup sliced almonds 1 teaspoon garlic powder 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground pepper 1 large egg white, beaten 1 pound pork tenderloin, trimmed and cut diagonally into 1/2-inch-thick slices 1/4 cup honey 2 tablespoon reduced-sodium soy sauce 2 tablespoon Dijon mustard Cooking Directions Step 1 Preheat oven to 425°F. Set a wire rack on a baking sheet and coat it with cooking spray. Step 2 Place breadcrumbs, almonds, garlic powder, salt and pepper in a food processor; pulse until the almonds are coarsely chopped. Transfer the mixture to a shallow dish. Step 3 Place egg white in another shallow dish. Dip both sides of each pork slice in egg white, then evenly coat with the almond mixture. (Discard any remaining egg white and almond mixture.) Place the pork on the prepared rack and coat on both sides with cooking spray. Step 4 Bake the pork until golden brown and no longer pink in the center, 16 to 18 minutes. Step 5 Meanwhile, whisk honey, soy sauce and mustard in a small bowl. Baby Tiramisù Provided by EatingWell.com INGREDIENTS 1/2 cup nonfat ricotta cheese, (4 ounces) 2 tablespoon confectioners’ sugar 1/2 teaspoon vanilla extract 1/8 teaspoon ground cinnamon 12 ladyfingers, (about 1 3/4 ounces) 4 tablespoon brewed espresso, or strong coffee, divided 2 tablespoon bittersweet chocolate chips, melted COOKING DIRECTIONS Step 1 Combine ricotta, sugar, vanilla and cinnamon in a medium bowl. Step 2 Place 6 ladyfingers in a 9-by-5-inch (or similar size) loaf pan. Drizzle with 2 tablespoons espresso (or coffee). Spread the ricotta mixture over the ladyfingers. Place another layer of ladyfingers over the ricotta and drizzle with the remaining 2 tablespoons espresso (or coffee). Drizzle with melted chocolate. Refrigerate until the chocolate is set, about 30 minutes. Traveling Playground

Come play at the park this summer! Join recreation activities organized by the Nampa Recreation Department at various parks throughout the summer. Mondays join the fun at Lions park from 11am-1pm. Tuesday at Liberty park from 12noon-1:15pm. Wednesday at Lakeview Park, near the pool 11:30am-1pm. Or Thursdays at Indian Creek Park 12:30pm-1:15pm

Tuesday Night No Drop Bike Rides

Never fear being left behind by your riding group again! Beginning May 4th, join us for scenic Tuesday evening bike rides. Distances will range from 20-60 miles (toward the end of the season) and speeds between15-18mph. Meet at the Nampa Rec Center on Tuesdays at 6:15pm.
